Demerara sugar is produced from sugar cane and consists of large grains that provide a more crunchy texture. This sugar also undergoes a light refinement process, but as it does not need the addition of chemical additives, its nutrients are preserved. Reaching a higher nutritional value compared to refined sugar, but still lower than that of brown sugar. Its differential is in the refining process, where it does not receive chemical additives and is extracted right after cooking the sugarcane juice.
